A Festive Veggie for the Holidays

While I am a weekly preparer of broccoli, cauliflower and many other veggies, the holidays call for something different. Cue the romanesco! A kinda broccoli, cauliflower hybrid, its from the same brassica family as Brussels Sprouts, and is definitely the coolest looking plant you’ve ever seen. The texture is close to cauliflower, but the color is bright green, and the florets form fractals, the exact number of which forms a Fibonacci number. Go ahead and share that at the dinner table.

Besides looking cool, romanesco is a great balance of fiber and protein for a veggie. A 1 cup serving has about 4g of both, which means it will help keep you full and balance blood sugars. A serving of romanesco also contains about 10% of your daily potassium needs. Most people do not get enough potassium, so even if you make a habit of eating a banana a day, it’s still a good idea to include veggie choices too.

Cook romanesco as you would cauliflower or broccoli. My preference is to roast it. Here’s a simple, tasty recipe to try out. Enjoy!
